Pancakes are one of the most popular breakfast foods, but are usually let down by the notion that it is ‘unhealthy’. However, this banana pancakes recipe will change your mind about that.

  1. Bananas
  2. Eggs
  3. Flour 
  4. Baking powder

  • Cinnamon 
  • Vanilla essence 
  • Chocolate chips

  • Fruit
  • More bananas 
  • Syrup
  • Yoghurt 
  • Nuts

Blend your banana and egg.

There are two reasons you should do this. 

  1. It is more convenient to combine the two by blending, rather than smashing and hand-whisking them together. 
  2. Blending the ingredients will add air to the mixture and give you a fluffier pancake than if you mix it by hand. 

Be sure to blend it for about 1 – 2 minutes for the best results. 

Hand mix the flour for fluffy banana pancakes.

If you’d like to add any essence or cinnamon, I would recommend doing it at this step.

Fold in your dry ingredients to ensure the batter keeps the air you worked into it. If you blend the flour in, the batter will become too liquid, and your pancakes will be flat.

Fry your pancakes. 

Treat these banana pancakes like you would any other pancake when frying. 

  1. Don’t leave the heat too high. 
  2. Add a little at a time.
  3. Flip when bubbles start to form.

Banana Pancakes made with 4 or less ingredients and no added sugar. This recipe is easy, quick and meal prep friendly. It can be altered to make pancakes for a single person, or a family of 4.

Ingredients

  • 1 Banana
  • 1 Egg
  • 1/3 cup Plain Flour, Or Self-rising flour
  • 1/2 tsp Baking powder, Leave this out if you are using self rising flour

Method

  • 1)

    Add the banana and egg to a blender. Blend for about 1 minute, or until it has a smoothie like texture.

  • 2)

    Pour this mixture into a large bowl and begin heating your frying pan.

  • 3)

    Add your dry ingredients to the banana egg mixture, and use a spatula to fold it in. (Flour and baking powder)

  • 4)

    Once your batter is combined, add a bit of butter to your frying pan and begin frying your pancakes. You can add chocolate chips to the pancake before flipping.

  • 5)

    When all your pancakes are fried, serve with your favourite toppings and enjoy!
