Blend your banana and egg.
There are two reasons you should do this.
- It is more convenient to combine the two by blending, rather than smashing and hand-whisking them together.
- Blending the ingredients will add air to the mixture and give you a fluffier pancake than if you mix it by hand.
Be sure to blend it for about 1 – 2 minutes for the best results.

Hand mix the flour for fluffy banana pancakes.
If you’d like to add any essence or cinnamon, I would recommend doing it at this step.
Fold in your dry ingredients to ensure the batter keeps the air you worked into it. If you blend the flour in, the batter will become too liquid, and your pancakes will be flat.

Fry your pancakes.
Treat these banana pancakes like you would any other pancake when frying.
- Don’t leave the heat too high.
- Add a little at a time.
- Flip when bubbles start to form.
